Utah Arizona suggested meal planning and assignments

The attacment has the suggested meal assignments for the trip.

We need to know if anyone has any special dietary requirements or
food items that could cause problems, if anyone has concerns let
us know. That way we have the time to adjust before the departure.

Feel free to make suggestions to the proposal below, As we can make
any adjustments needed

Bob:

I like the approach. There may be an occasion or two where we stay at camp for two days and if someone is so inclined, a good old fashioned burger for lunch would sure hit the spot. We will need a grille though.

My offerings:

Dinner
1. Chicken Adobo with rice and grilled veggies;
2. Beef Stroganoff with biscuits
3. Chicken Cacciatore with salad

Lunch
sandwiches

Breakfast
Freedom Toast
one other meal to be tested.

I will be preparing all of my dinners with the pressure cooker. Even though my PC is reasonably large, it may not be enough. Are you bringing yours?

By the way, is Tom going to be our wine coordinator again this year?

I will be beinging my pressure cooker in case it's needed.
I will also have a Grill.

Meals I can do:

Breakfast:
French toast, Sausage
Hot Cakes, bacon
Eggs, sausage, hash browns

Lunch:
Chicken salad lettuce wraps (HOT SAUCE)
Lunch meat sandwiches

Dinner:
Spaghetti, meatball,sausages
Hectors fried chicken, mashed potatoes, mixed veggies
Beef stroganoff, over egg noodles
Fried Pork chops, grilled potato and onions
Grilled steaks with baked potatoes

I like the idea of a hot lunch if we camp in the same location.
If I can find it, I have a recipe for a Greek style beef stuffed pita bread
that is pretty good. It's similar to what Ben did on the last outing
to the National Parks.

1) Dutch Oven Chicken and Rice with Brocklli
2) Lasagana
3) Working on it - Beef Stew is a possibility

Lunch
Sandwiches

Breakfast
Eggs in a bag
working on DO ???

Deserts
Nights when I do not have the main course I can do a Peach Cobbler up to x2
Days we are in camp all day I can do the 3x Chocolate Cake x1

If one 12" DO is not enough you will need to fill up on side dishes or enough wine so you don't care!

Breakfasts (2) will most likely be pancakes/scrambled eggs w/ bacon, and breakfast burritos. Usual breakfast stuff on the side.

Lunches (2) will be (depending on replenishments en route) sandwiches or a 'salami fest' buffet-type lunch selection. Again, usual lunch stuff on the side.

Dinner is still under review, but will most likely be something grilled with veggies or perhaps something along the lines of ropa vieja.

As usual, I will require a medical release prior to anyone eating anything I cook :D

I can bring either a small propane bbq or a small briquet bbq if needed.

My two breakfasts should consist of Freedom Toast and sides one day and pancakes the next with a meats of bacon/sausage or ham, hash brown potatoes, toast jellys, maple syrup. Lunches will be some type of cold cut sandwiches and possibly a hot meat ball sub with mozzerela cheese (great if in camp and set-up). My dinner is in the planning stage, something with a pesto sauce and a pasta...
